Warm Loaded Potato And Corned Beef Dip

Ingredients
  • 8 ounces cream cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp onion soup mix
  • 2 scallions, sliced
  • 1 1/2 cups grated yellow cheddar
  • 1 15 ounce can whole potatoes, small diced
  • 1/3 pound deli sliced corned beef, small diced
Method
1.In a bowl combine the cream cheese, mayonnaise, sour cream and onion soup mix.

2.Fold in all the scallions but 1 tbsp, set aside.

3.Fold in 1 cup of the cheddar cheese, set remaining aside.

4.Fold in the potatoes and the corned beef.

5.Transfer mixture to a 5 cup round baking dish or pan.

6.Cover with aluminum foil.

7.Preheat the POWER AIR FRYER XL to 350 degrees for 2 minutes.

8.Using a sling made from aluminum foil, place the dish into the basket of the POWER AIR FRYER XL.

9.Air fry at 350 degrees for 30 minutes.

10.When 30 minutes is up, uncover the dip and top with remaining cheddar cheese.

11.Air fry for another 2 minutes.

12.Remove from POWER AIR FRYER XL and top with scallions.

13.Serve with crackers, crudite or toasted bread. To toast bread to serve with dip:

Cut bread into rounds, triangles or slices. Place the bread into the basket of the POWER AIR FRYER XL. Spray with some cooking spray, toss and spray again.

Air fry the bread for about 7-9 minutes at 350 degrees, tossing it every couple of minutes, until toasted.
